⁣Tagatose is a naturally occurring six carbon ketose found in yogurt, milk powder, and cheese, but in relatively low amounts. Tagatose is a differential isomer of fructose, which is mainly produced from galactose in industrial production through isomerization, decolorization, desalination, concentration, crystallization and other steps.
